These lollipops are a fantastic festive treat for kids and are super easy to make!
You will need:
- 200g Madeira cake
- 140g-160g white chocolate
- 700g chocolate
- pretzels, to resemble antlers
- red sweets, such as smarties or M&Ms
- white confetti sprinkles
- black icing pens
Let’s get started!
First start by pulsing the Madeira cake in a food processor until you have fine crumbs. Melt the white chocolate in a bowl in the microwave. Once you have melted your chocolate mix into the cake crumbs. Form the mixture into 10 small truffle-sized balls, and roll gently in your palms to smooth the surface. Arrange the balls on a baking parchment-lined tray and refrigerate for about 30 minutes to allow the mixture to set.
For decoration melt the chocolate in a microwave, one at at time dip a lolly stick into the melted chocolate about 1.5cm in and carefully poke halfway into a cake ball. Repeat with the remaining balls, and return to the fridge for a further 5/10 minutes.
Once you have let your cake pops sit for about 5 minutes in the fridge it’s time to dip the cake pops one at a time into the melted chocolate, allowing any excess chocolate drip off. Spin the cake pops to even out the surface. Quickly attach 1 pretzel on each side of the reindeer head for antlers, holding them in place until the chocolate coating sets.
Stand the cake pop firmly in a hole in a colander or you can use a cake pop holder if you have one. Allow the cake pops to set for about half and hour.
Once the chocolate has set use a toothpick and dot a small amount of melted chocolate in position for the nose and attach 1 red sweet and hold in place whilst the chocolate sets. Next dot a small amount of chocolate in position for the eyes and attach 2 white miniature confetti sprinkles.
To finish, use your icing pens and draw on mouths and dot the eyes, once you have finished decorating let the cake pops dry completely before eating.
